Feeding the cows
During the spring and summer months, our cows graze on fresh grass from natural meadows, rich in Alpine flowers. In winter, with the fields covered in snow, the cows remain in the cow shed, where they are fed on dried grasses (hay).
Throughout the year, their diet is balanced and includes a very small amount of cereal-based supplement. This supplement meets rigorous specifications, which include a guarantee that it contains no GMOs.
Milking the cows
The cows are milked twice a day, morning and evening, 7 days a week. They are milked mechanically using a milking machine that emulates the natural sucking of the calf. Nowadays, cow sheds are increasingly equipped with a milk pipeline drawing the milk directly from the cow's udder to the cheese making vat.
On average, a cow produces 9 to 10 litres of milk per milking. This quantity may vary; maximum yield occurs some time after calving and then gradually reduces.
Once a year the cows each have a calf, which triggers the onset of lactation again.
